We have been trying to think outside the box (the Easy Lunchbox!) for lunch box ideas. Today my son took this to school. The main dish is Italian Pizza Rolls.
I have noticed now that he is in elementary school and has only 20 minutes for lunch that he is usually not able to finish the entire lunch. (My son LOVES to talk, and I am guessing that he is talking most of the time.) He comes home hungry! Our lunches are still a work in progress because of this.

Today I packed waffles (made yesterday, froze, then toasted this morning, allowed syrup to soak in, then cut up and tossed in a double-walled steel thermos), applesauce and cheese crackers for my son. My daughter has a turkey dog in her thermos, the bun (already ketchup-ed) and crackers in a container and a dish of applesauce.
Tomorrow will be cheese tortillas, apple slices and carrots.
We lead a pretty dull lunch box life :)

My kids have the same problem - not enough time to eat lunch. I think the lunch container you use will help a lot - not a lot of stuff to open, just dig in and eat.
my daughter had the same problem for the first two years; this year they switched to recess before lunch and now she eats everything! maybe will even try to sneak in more healthy stuff this year!
