Menu Planning, 9/12/10

Ah, the week after the big freezer cooking day. (Actually not so big this month.) Now it is time to pull out those meals and enjoy not cooking, or only cooking a little! I am also embarking on a pantry challenge for the next two weeks, so I am trying to use up the meat I have in the freezer.

Monday--Macaroni & Cheese, cubed chicken, broccoli
Tuesday--Stacked Tacos, avocado, salad
Wednesday--Freezer Burritos, salad
Thursday--Turkey & Bow Tie Pasta Skillet Dinner, spinach
Friday--Autumn Glazed Pork Chops (pushed back from last week)
Saturday--Mustard Marinated Steak, Carrot Coins, Mashed Potatoes
Sunday--Quick Slow Cooker Turkey Chili, rolls

Lunches will be leftovers, sandwiches or something else we create. (See our lunch box ideas here.)

Breakfasts will be omelettes, toast, fruit, granola, Cheerios, smoothies, etc.

Tomorrow morning I'm going to plan a menu for the week. It's been hard for me to cook (which I used to love since I got gastroparesis.

But I know that if I plan out my meals it will be easier, less expensive & better food for my family.

I made your beefy cornbread today, but I used spaghetti sauce instead of salsa, used some onion & garlic powder instead of the Mexican spices and chopped m'room & peppers fine instead of corn. That spaghetti sauce may well have gone to waste & I was out of salsa.

Voila, my first freezer meals!
