Seafood Nachos



Last week I shared a recipe for Cheesy Salsa dip, perfect to serve at a Super Bowl party, or any party for that matter. Today, I have another good appetizer recipe; it is sooooo good that we sometimes have this for dinner. (I have had this recipe for years, so I don’t remember where I originally got it.)

Seafood Nachos
30 baked tortilla chips
8 oz. imitation crabmeat, chopped
¼ c. reduced-fat sour cream
¼ c. reduced fat mayonnaise
2 tbsp. finely chopped onion
¼ tsp. dill weed (I often omit this)
4 oz. reduced fat cheddar cheese
¼ tsp. paprika

Arrange tortilla chips in a single layer on an ungreased baking sheet. In a bowl, combine the crab, sour cream, mayonnaise, onion and dill. Spoon about 1 tbsp. onto each chip. Sprinkle with cheese and paprika. Bake at 350 degrees for 6-8 minutes or until cheese is melted.

Serves 6.

What a great appetizer - I've got some canned crab meat in the cupboard so I think I might try that in the recipe. Sounds delicious!
