Menu Planning, 2/28/10

Ah, this is one of those weeks where I really didn't feel like menu planning. I felt like just winging it, but I know where that would lead me--right to take out even though I have a lot of food I could eat. So, here is the plan (you may notice some repeats from last week as I didn't get to make them all):

Monday--OAMC Favorite Macaroni & Cheese, broccoli
Tuesday--Cheeseburgers & Oven Potato Wedges
Wednesday--Stuffed Shells & carrot sticks
Thursday--Tuna Noodle Casserole, veggies
Friday--dinner out
Saturday--One Pot Stuffed Pepper Soup & bread
Sunday--Split Pea Soup & bread

I will also be finishing up a new batch of freezer meals on Monday. To see what I have planned for my freezer cooking day, go here.

Lunches will be leftovers or sandwiches.

Breakfasts will be cereal, oatmeal, toast, omelettes, or pancakes.

You have made my day. I usually meal plan on Saturdays and was completely unmotivated, which means I didn't plan or shop! I saw this is in my Reader and I'm making three of your meals this week - the OAMC Mac and Cheese, the Potato Wedges and the Stuffed Shells.

I serve potato wedges regularly for lunches and the occasional dinner but never thought to make more and freeze them. How easy - and what a great way to use big potato purchases!

And stuffed shells you don't have to cook?!?! I had no idea. My husband loves them but the work involved makes them a rare dinner. Now I can make a few batches and have them ready :)

I made the stuffed shells at the beginning of the month and froze two batches. We had the first batch two weeks ago, and they turned out great. Just make sure to coat the shells entirely in pasta sauce and let them sit in the fridge overnight. The few places I didn't get sauce on were a bit crunchy, but all the rest tasted like I had cooked the shells first.
