Our month of eating from the pantry was successful in that we made enough room (just enough room) to finally get our 1/4 side of beef. (I'll be posting about that in the next few weeks.)
Now, however, our freezer is stuffed to the gills again thanks to the beef and the freezer meals I have been cooking this week, so February will be another eating from the pantry month for us. Here is the plan:
Monday--Stuffed Shells (at least 1/2 of this will go in the freezer as my last freezer meal to make this week)
Tuesday--Slow Cooker Beef & Mushrooms, veggie
Wednesday--Lighter Meatloaf, mashed potatoes, veggie
Thursday--Split Pea Soup & Homemade Bread
Friday--Grammy's Tuna Noodle Casserole
Saturday--Asian Salmon, rice & snow peas
Sunday--Standing Rib Roast, potatoes & veggie
Lunches will be leftovers & sandwiches.
Breakfasts will be pumpkin bread, oatmeal mueseli, omelets, pancakes, and cereal.
