We started eating from the pantry on January 1st, and I am excited to clear out some of the old as I have had to wait to buy our 1/4 beef side until I have some more room in the freezer. Here is the plan for this week:
Monday--Cheeseburgers, potato chips & carrot sticks
Tuesday--Cheesy Chicken Biscuit Bake
Wednesday--Italian Mixed Bean Soup
Thursday--Slow Cooked Pork Roast with potatoes & carrots
Friday--Pulled Pork Sandwiches & broccoli
Saturday--Quiche in a Bag
Sunday--Quick & Easy Beef & Rice & snow peas
Lunches will be leftovers, sandwiches and/or canned soup.
Breakfasts will be oatmeal, pancakes, omelets and yummy blueberry banana muffins (I will post the recipe for these on Friday!)

The quiche in a bag recipe looks interesting. I'd heard not to freeze raw eggs, that the texture comes out wrong. Does it work well in the quiche?
My mom does pulled pork sandwiches with cole slaw. Yummy!
I'm still making room for our next side of beef, too. It's delicious, but not compact!
We have had the quiche in a bag one other time after it was frozen, and I didn't notice any difference in taste from when it is fresh.
I did a personal pantry challenge in the fall, and it was so illuminating and educational to see what we ran out of and where we need to plan better. Good luck!
I'm doing the pantry challenge too. I have a beef roast planned for this week (which we had tonight), and like you, had planned sandwiches with the leftovers. One catch though: hubby decided to take the leftovers to work for lunch, so I'll have to come up with something creative!!
I started this challenge last month as we were moving to try and use everything up..that was December 14 and we are still eating from the pantry..too cool!
