Well, it is the second full week of eating from the pantry, and we definitely are not suffering. We still have several cuts of meat we purchased last year that we need to eat up before we get our new side of beef.
This past week I made a 3 lb. pork loin in the slow cooker with potatoes and carrots. We ate that on Wednesday night. Thursday night we shredded some of the pork and had pulled pork sandwiches. Friday night we took more shredded pork and mixed it with frozen carrots and peas to create quesadillas. Today we finished up the shredded pork and mixed veggies by putting them on top of pita pizzas. I never would have guessed that first meal would have stretched so far!
Here is the plan for this week:
Monday--Mushroom Barley Soup & Steak
Tuesday--Slow Cooker Pork & Potato Dinner (if this turns out good, I will post the recipe on Friday)
Wednesday--Slow Cooker Beef Pot Roast with Carrots & Potatoes
Thursday--Stuffed Pork Chops
Friday--Chicken Breast, Broccoli & Packaged Alfredo Pasta
Saturday & Sunday--we may be out of town, so we will have to make plans for this as the week goes on.
Breakfast will be pancakes, yogurt, zucchini nut muffins, banana-blueberry oatmeal muffins, sausage, omelets (not all at once!)
Lunches will be sandwiches or leftovers.
