Veggie Stuffed Pita Sandwich


I got this recipe years ago at a Weight Watchers meeting, and I still love it! It makes a great lunch or a light dinner. I just dump ingredients; really, make this to your own taste.

2 heads of broccoli, cut into small pieces
3-4 carrots, peeled, cut into small pieces
Ranch dressing (to taste)
Shredded cheddar cheese (to taste)
Chicken, cubed and cooked (optional)

Steam the broccoli and carrots until they are the consistency you like.

Stir the veggies up with the ranch dressing. I am not a huge fan of dressing, so I just use enough to coat them; you might like to add more.

Stir in the shredded cheese.

Stuff in the pita. Voila. A quick and tasty lunch or dinner.

To make it more substantial, add cooked, cubed chicken.

This should make 3 to 4 pita half sandwiches.
