Well, definitely not one of our better weeks. Between going on vacation, then going away for the weekend 4 days later, well, alot of food got wasted.
--a little more than 1/2 a container of ricotta
--a handful of rasperries (I can't believe we wasted this seasonal treat!)
--1/2 container leftover take out white rice from Chinese,
--and yes, tofu. My nemesis, tofu. Next time I open up a package for my daughter, I resolve to make a smoothie the same day so it doesn't end up as waste again!

Can you freeze ricotta? I never buy it so don't know.
Tofu can be frozen - it changes the texture to be more 'meat like', it doesn't stay creamy, which makes it good for stir fry or soup.
Rice can be frozen and reheated easily.
Raspberries - how could that happen
Holidays really mess up food routines, don't they?
Alas I never get through a pack of tofu either, I think it's because I'm the only one who eats it and there is only so much I can eat at once.
Well done though; that's still not a bad amount...
